Against the tide, like salmon.

We immediately felt we wanted to make a new, modern wine that was all our own.

We didn’t like the idea of mimicking Valtellina by planting Nebbiolo or producing yet another Chardonnay, Merlot or Pinot.

“What to plant in a valley with no winemaking history? Well, something that in turn is a bet like ours!! We don’t like normal things!!”

The “PIWI” varieties

Following a trip to Trentino, the choice falls on something unexplored and unknown: the “Resistant Varieties” or “PIWI”.

These grape varieties have been selected to be resistant to fungal diseases, greatly reducing the environmental impact of vine cultivation. The acronym PIWI derives, in fact, from the German term Pilzwiderstandfähig, which means “resistant to fungi“. 

This varieties doesn’t need many treatments and together the processing completely by hand, the absence of GMOs and herbicides and the use of water from the stream alone, characterize our production. In the first three years, the vineyard is worked without bearing any fruit. “Plants need to adapt to the characteristics of the new soil, to the slopes, winds and temperature range; And we also need to make some mistakes to learn better.”

Renovation

The carpentry production and the house was abandoned in the 40s and since then it has been in a critical condition of abandonment. Victim of the wear and tear of time and various lootings, it was purchased by me and my father in 2018 in a full state of decay.

After years of experimentation and dreams, the Restoration of the Former Mill of Indovero was born in 2022, which saw the involvement of the NATIONAL RECOVERY AND RESILIENCE PLAN RURAL ARCHITECTURE CALL 2022 – FOR THE RESTORATION AND ENHANCEMENT OF THE RURAL ARCHITECTURAL AND LANDSCAPE HERITAGE TO BE FINANCED UNDER THE PNRR INVESTMENT 2.2: “PROTECTION AND ENHANCEMENT OF ARCHITECTURE AND RURAL LANDSCAPE” FUNDED BY THE EUROPEAN UNION – NEXTGENERATIONEU.

The aim of this intervention is to restore the normal structural conditions of the building by making it energy efficient using CAAM certified natural materials and insulating material produced by a Start Up that recycles agricultural processing waste. All according to the strict canons of green building, while maintaining in its form the historicity that characterizes the structure.
